For 400g of Coffee Granola

 

1 Tbsp

Moccona Classic Dark Roast Coffee

30ml

Hot water

150g

Oat flakes

30g 

Coconut oil

70g

Honey

30g                     

Almond Powder      

For 2 Parfaits

250g

Greek yoghurt

100g

Home-made Coffee Granola

100g

Fresh berries

40g

Crushed hazelnut

40g    

Dark Raisins

20g

Dried goju berries

  Method

  To prepare the coffee Granola:

 

  1. Combine coffee and hot water until powder is dissolved, allow to cool.
  2. Melt the Coconut oil with honey. When melted, add the Moccona Classic Dark Roast Coffee and stir well.
  3. In a large bowl, combine the flakes, almond powder, crushed hazelnuts, dried raisins and dried goji berries.
  4. Pour in the liquid ingredients. Mix well to coat everything.
  5. Spread the granola on a large oven tray.
  6. Bake at 160°C for about 30 minutes. Stir the granola on the tray every 10 minutes.
  7. The granola is ready when golden.
  8. Allow to cool and store in an airtight box.

To assemble the Coffee Granola Parfaits:

In a 200g Moccona Jar, place 2 tbsp of coffee-granola, followed by 2 tbsp of berries, followed by 2 tbsp of Greek yoghurt. Repeat layers with remaining ingredients. Enjoy immediately or cover and refrigerate.
